Whatever type of event you’re planning, we know it’s a lot to take on – believe us, we’ve been there! “Less stress” is our motto, which is why we’ve put together a roundup of the best seafood recipes that are simple and hassle-free, but will really wow your dinner party crowd. This survival guide proves that serving up a healthy and delicious multicourse meal doesn’t have to be difficult.


One of the reasons we love seafood so much is because it is so versatile – it can be incorporated into a seemingly endless array of dishes. Harvest Bowl


Havest Bowl with Banza Chickpea Rice

A take on our favorite Sweetgreen bowl, this recipe packs tons of protein thanks to the Banza chickpea rice and hits all the elements of creamy, sweet, and crunchy that you love in the Sweetgreen version. Make it vegan by omitting the goat cheese and substituting ripe avocado.

Ingredients

1 bag Banza chickpea rice ½ cup balsamic vinaigrette ½ cup sweet potatoes ¼ cup crumbled goat cheese ½ cup mushrooms (shiitake, cremini or a mix) 1 handful of basil 1 tbsp toasted almonds

Instructions

Cook Banza rice according to package instructions. Strain, rinse and set aside in a large bowl to cool. Cut sweet potatoes into ⅛” thick slivers. Toss with olive oil, salt and pepper and roast at 425˚F for 30 mins. In a small nonstick pan, sauté mushrooms in 2 tbsps olive oil until golden brown and crispy. Remove from heat and add salt and pepper to taste. Combine Banza rice in a low rimmed bowl. Add sweet potatoes and mushrooms. Pour balsamic vinaigrette over top, add toasted almonds, and fresh basil to top.

Cheesy Chicken & Rice Casserole Cream of Mushroom Soup 1 1/3 Cup Water 1 1/4 Cup uncooked long-grain white ice 1/2 tsp onion powder 1/4 tsp ground black pepper 2 cups frozen mixed vegetables 4 Skinless, boneless chicken breast Stir everything but chicken in an 11X18 shallow baking dish. top with chicken and season. Cover. Bake at 375F for 50 minutes or until the chicken is cooked through and rice is tender. let stand for 10 minutes,Stir rice before serving.

Chix Hot Chicken – The Hottest Chicken We’ve Ever Eaten?

Let me start off by saying – 🔥🔥🔥🔥🔥! (And drinking a tall glass of water)


It’s taken us quite awhile to get here but we’re finally at Chix Hot Chicken! There was plenty of fanfare when it opened of course. This makan spot is the brainchild of our very own OG Singapore Idol, Taufik Batisah, and his best friend, Ismail.


They did plenty of research and the end result is a Nashville-style fried chicken that’s designed to do 2 things – burn your mouth off AND make you keep wanting more 😛



You can enjoy the searing heat in a number of ways. Fried chicken parts, chicken burger, chicken wings (which I regret not trying) and chicken tenders. You get to choose your level of spiciness of course – ranging from Mild, Medium Hotness, Extra Hotness and all the way up to Insane Hotness.


There are also a number of sides to choose from but the main attraction is obviously the chicken.


Quarter Nashville Hot Chicken ($9.90)

So what makes this chicken HOT? It’s all thanks to the dry rub which includes the (in)famous Ghost Pepper. We’re talking about a mouth-numbing pepper here that’s 2nd only to the Carolina Reaper when it comes to heat. But trust us – this one’s gonna make you sweat!


The chicken is lovingly prepped and marinated before getting that #DeepFriedGoodness treatment. And then, it’s doused in that dry rub and you can just see that aura of heat emanating from the fried chicken.


Being heroes, we decided to go straight to the top level – Insane Hotness. And we found out why they call it Insane. WAH PIANG EH DAMN HOT SIA! It starts off as a slow burn and before long, your mouth feels like a furnace, sweat is dripping from your face and begin to question your decision 🤣


PRO TIP: Don’t rub your eyes while eating (and even for awhile after washing your hands).


Soul Sliders ($12.90)

Something that you will see often on the Chix Hot Chicken IG feed is what they call Soul Sliders. And for good reason too. These are pretty damn good chicken burgers! You also get to choose the heat level here – we went with the Extra Hotness (which was still pretty hot ah).


Boneless and battered chicken patty with some slaw, pickles and sauce (they call it Pink Mayo but like macam Orange Mayo liao) all between buns. And they may call it a slider but looking at the size, I’d say these are much bigger than sliders lah.


The chicken patty really reminds me of like thos Taiwanese Chicken Cutlets. Albeit a bit thicker ah. But that extra crisp batter is very welcome along with that tender and juicy chicken. A VERY satisfying bite indeed 😀


PS they have Chicken & Waffles too but only on Saturdays!



ColeslawMilkshake

There are a few Side Dishes and beverages to choose from (some hopefully to help with the heat). They’ve got Fries, Cheese Fries and Mac & Cheese. We went with the Creamy Tangy Coleslaw. It’s definitely tangy and reminded us a lot of kinda like a Raita to be honest.


They’ve got soft drinks, floats and milkshakes on the menu to wash down your hot chicken. I went with the Milkshake with the trusted belief that something creamy would help when the hot chicken kicked in. It helped but it did run out rather quickly lah 😛 And then we found out that the soft drinks were refillable.


PRO TIP: Order 1x Milkshake and 1x soft drink so that when your Milkshake runs out, you got back up LOL


All in all, we’d say that Chix Hot Chicken lives up to its name. It’s definitely serving up the real deal! The menu may not be big but it’s serving up some good stuff for sure. So drop by and test your mettle – can you handle the Insane Hotness? There’s only one way to find out.

Peppermint Choc-chip Iceblocks

These Peppermint Choc-chip Iceblocks are currently my sons favourite snack and I’m not complaining. They take literally minutes to make and don’t require the oven which in QLD summer, is a godsend. Plus, all that goodness disguised in this tasty iceblock, what more could you want from an icy treat?

I freeze these in my Onyx stainless steel iceblock moulds. I also freeze them in little containers so the kids can pack them in their lunchbox. By morning tea they are soft enough to scoop out and eat easily.

Take a look at the variations (below the main recipe) for suggestions to alter the recipe to suit any specific dietary requirements.

Peppermint Choc-chip Iceblocks

These Peppermint Choc-chip Ice-blocks are quick and oh so easy to make and crammed with so much nourishment. And super delicious to boot!

400 ml coconut milk ((I used Ayam brand))Generous handful baby spinach1 medium sized avocado⅓-½ cup sweetener ((rice malt or maple syrup))15-20 drops food grade peppermint essential oil, (or peppermint essence, to taste)⅓ cup cacao nibs or dark chocolate chips if you'd preferPlace the coconut milk, baby spinach, avocado, sweetener and peppermint oil in a high speed blender or food processor and blend until creamy.

Taste the mixture to check the mint flavour and sweetness is right for you. I do find the flavour intensifies and is much more delicious when the mixture is frozen.

Fold in the cacao nibs or choc-chips and then pour into mould and freeze until firm.

Remove from the moulds and enjoy. I find running the mould under water helps to release the ice-blocks.

Fructose Friendly

Choose rice malt as your sweetener. 

Coconut-free

Replace the coconut milk with cows milk or a nut milk.

School lunchbox
